Easy Breakfast Idea // Egg White Muffins

Mornings around here can be fairly chaotic so my focus is usually around getting the kids ready for school & out the door. I rarely manage to get anything down myself other than a cup of coffee until after I’m back home from drop off. So I was searching for something I can easily feed myself in the midst of the chaos and landed on these Easy Egg White Muffins! I got such a wildly positive response & tons of interest and questions when I shared them on stories a couple of weeks ago, so thought I’d share them here, too!

EASY BREAKFAST IDEA // EGG WHITE MUFFINS

I had been looking for a simple way to get my protein & veggies in first thing in the morning without having to go through the fuss of a healthy breakfast with eggs each day! The nice part is that you get to do all of your chopping & baking one time and then you have several breakfasts ready to go at the touch of a few microwave buttons.

Here is what I did…

INGREDIENTS FOR EASY EGG WHITE MUFFINS W/ SAUSAGE & VEGGIES

  • egg whites [I used about 2 of the small cartons to fill the muffin tin]
  • 3 chicken sausages – chopped [I used the sundried tomato & garlic ones from Trader Joe’s]
  • handful of fresh spinach leaves – chopped
  • 10 cherry tomatoes – cut in halves or thirds
  • 1/2 red onion – diced
  • feta crumbles 
  • salt & pepper
  • muffin tin

EASY EGG WHITE MUFFIN INSTRUCTIONS

1 // Start by chopping up the sausage & veggies.

2 // Lightly coat the muffin tin with non-stick spray and start adding the chopped ingredients to the tin.

3 // Then fill the tin with the egg whites to the top.

4 // Sprinkle the feta and salt + pepper on top and bake 15-18 minutes at 375-400°. I turned it up to 450 for another 2-3 minute at the end to finish them off.

5 // Let cool and then enjoy! I top mine with salsa, but green hot sauce and Tajin is Ted’s favorite way to eat them.

I ate 2 muffins [and he ate 3] so we had enough left for another breakfast the next day. Simply pop them in the microwave & enjoy again! Obviously if you’re making for one, then you will have breakfast ready for several days. It’s up to you whether you share or not!! 😉

So easy and delicious on those busy mornings. I love having these on rotation, especially in the beginning of the school year when it’s so hard to get back into a routine! There are tons of recipes like this out there, so you can edit the ingredients and add your favorite things to these Easy Egg White Breakfast muffins.
